The Waiheke Scone Recipe

To Make 12-15 scones
Of interest mainly for the
ingredients, which are as unorthodox as the local lifestyle. Nevertheless
produces an excellent version of the New Zealand scone.
You will need
4 cups Plain Flour
4 teaspoons Baking Powder
355ml can Lemonade
300 ml Heavy Cream
What to do
-
Preheat oven to 200°C
-
Combine ingredients, stirring
just enough to mix them. Do not over-knead or the results will be tough. Roll
out to about 3 cm thick, and cut into75mm squares
- Place on a floured baking tray
and cook for 12 - 15 minutes
Lovely scones. Very filling. Serve
with butter, jam and whipped cream, and/or with honey.
