Dave's
Pumpkin Dip
Somewhere between Pumpkin Soup
and Hummus, this is yet another fast solution to the continuing question
of what to feed the household vegetarian. Serve with a bowl of grated
cheese, a salad and a loaf of Dave's
Homebrew Bread (60 minutes from starting to taking it out of the oven)
for dipping, and you'll get the non-vegetarians leaning over for a sample.
It has a relationship with
the Peanut Butter Hummus recipe, and with the Green Pea Guacomole.
This is also a starter for
a lunch dish - especially warm in winter. |
You will need

Pumpkin
|

- 2 teaspoons
|
Salt
|
2
- 3 cloves
|
Garlic,
chopped
|

Lemon,
juice of
|

teaspoon

Paprika
|
To
taste
|
Chilli
|

teaspoon

Caraway
Seed
|

teaspoon

Ground
Coriander

teaspoon

Ground
Cumin

teaspoon

Cassia

- 3 tablespoons

Olive
Oil

Tomato
Puree, or a chopped tomato

Peanut
Butter

Method:
1. Boil or
steam the pumpkin until just tender
2. Combine
with all of the other ingredients in a large bowl and use a stick blender
until smooth. Serve hot or cold.
