White Fluffy Rice

Four 4-6 persons

2 cups white long grain rice
1 teaspoon salt
3 cups boiling water

Place rice and salt in heavy base lidded frypan, and heat - keep it moving - while the water boils.

Add water, turn element to low and replace lid. Water will be absorbed and rice will be cooked in about 20 minutes, but check from 15 minutes on.

Do not stir while rice is cooking or it will be pasty not fluffy.

Test by inserting a knife blade in the centre of the pan and parting the rice gently. You will be able to see whether there is still free water around.
