Waffle House Waffles

This is one that will do at a pinch made fresh when someone in a fit of adolescent spontanety decides he wants waffles for breakfast on Sunday morning. It is better, of course, left to chill in the fridge overnight.

A variation on the original found at www.topsecretrecipes.com

You will need

  • 1.5 cups Flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 Egg
  • 1/2 cup plus 1 tablespoon Sugar
  • 2 tablespoons (30g) Butter
  • 2 tablespoons (30g) Cooking Oil
  • 1/4 cup Sour Cream
  • 3/4 cup Milk
  • 1/4 cup Low Fat Milk or buttermilk
  • 1/4 teaspoon Vanilla Essence
  1. Combine dry ingredients in large bowl and set aside.

  2. Mix butter and oil together with sugar and egg and blend

  3. Add cream and milk and essence, and blend.

  4. Add to dry ingredients and mix well.

  5. Ideally, place in fridge for 10 - 12 hours for batter to mature, but can still make an acceptable waffle straight off.

  6. Place about a quarter cup at a time in a waffle iron and cook acording to instructions on the machine.

  7. Serve hot with usual accompaniments.
